Soul food is made with limited ingredients available during the slave period. Some of the dishes are as follows, ham hocks, chicken livers, fried chicken, chicken gizzards, ribs, shrimp and fried fish. Since slaves barred from getting educated the cooking instructions passed on orally to others. Once the slave system was abolished many have come out with new recipes for soul food from 1970s.

The diet before 70s, promoted weight among Americans and criticized by dieticians.  After that the soul food has undergone many changes and now a popular diet across the world.
