Schlaman had no idea how quickly or popular her food would become.  She continues, "I originally thought I'd be doing a little farmers market type of enterprise.  But six months after opening the doors, we had to start construction on an adjacent warehouse to keep up with the demand."

Now sold in retail outlets like Whole Foods, Raley's, and The Health Nut's, Schlaman has hired over a dozen bakers to help her keep up.  "I'm just really happy that we can be there for our special customers," said Schlaman.

Liberated Specialty Foods offers food directly from its bakery, direct ship via its online store, and through Amazon, in addition to being sold through retailers.
