NEW YORK, January 18, 2018 (Newswire.com) - Table olives have been an integral part of the Mediterranean diet since antiquity; a favorite food in Mediterranean countries to this date, a centuries-old snack. Today, "OLIVE YOU" announced a new European olive recipe.
Cooking with Olives
Steamed Mussels with Stuffed Chalkidiki Olives:
- 8 large onions
- 1 pomegranate (the seeds)
- 7 oz (200 g) Haloumi or Feta cheese, coarsely grated
- 1 tsp. fennel
- 1/2 cup olive oil
- 2 tbsp. green olives, cut in rings
- 1 clove garlic, minced
- salt – pepper to taste
Peel the onions. Cut the top off and empty the flesh (as you would do for stuffed tomatoes), leaving at least two layers. Finely chop the onion flesh. Place olive oil in a skillet, add minced onion and sauté for 2-3 minutes, until golden. Add cheese, fennel, olives, pomegranate seeds, garlic, salt and pepper. Leave on the fire for one minute or so to get all the flavors together. Stuff the onions with the mixture and place in a baking pan. Bake in medium oven for 15 minutes. Serve hot.
