The interest in plant-based living has exploded, due in part to the pandemic and people taking more interest in their overall health. The use of milk alternatives such as soy-, oat- and almond-based products, as well as increased acceptance of meat alternatives, has prompted many Americans to incorporate more plant-based products into their diets. According to the Plant Based Foods Association, about one-third of Americans are reducing their meat and dairy consumption, with roughly 29% identifying as "flexitarians" - people who eat a variety of foods but are trying to eat less animal products like meat, dairy, chicken and pork.
