Most of chefs make their Chocolate Charlotte with Rum, But there are many people who don't like it and for our children, For me personally I don't like a smell of alcohol, So I suggest :

- Orange juice or Milk for your children. a success!!!
- The coffee (what we will use here).
- Red fruit coulis
- Or just the water :)

Quick And Easy Desserts

Ingredients :

28 Ladyfingers
Dark chocolate (52-55% Cocoa) : 300g
Granulated sugar : 2 Tablespoons
Butter : 80g
Eggs : 6 piece
Sweet coffee : 30cl

Instructions :

Line a charlotte pan of 18 cm diameter with ladyfingers soaked in the sweetened coffee.

Then prepare your chocolate mousse : Melt the chocolate with the butter in a double boiler.

Whisk vigorously the egg yolks with the sugar for 5 minutes to get a white mousse.

Stir the melted chocolate, then very gently beat egg whites until stiff.

Fill your charlotte pan half the chocolate mousse, and put a layer of soaked coffee biscuits, add the rest of the mousse and finish with biscuits soaked.

Cover the chocolate charlotte a plate and overcome all with a heavy weight to press down well.

Place the chocolate charlotte 12-24 hours in the refrigerator.

Before serving unmold the charlotte into a serving dish and decorate according to the occasion or your desires.
