Antioxidants in Pecans May Help Our Hearts, Researchers Claim

Pecans contain different forms of vitamin E along with many other compounds that have been shown to function as antioxidants.

A recent study in The Journal of Nutrition reported that naturally occurring antioxidants in pecans may also contribute to heart health and disease prevention. This is because pecans contain different forms of vitamin E along with many other compounds which have been shown to function as antioxidants. In particular, pecans contain a form of vitamin E called gamma-tocopherol. The researchers found that after eating pecans, gamma-tocopherol levels in the body doubled and unhealthy oxidation of LDL (bad) cholesterol in the blood decreased by as much as 33 percent. Oxidized LDLs are suspected of being a contributing factor to inflammation in the arteries which increases risk of cardiovascular problems.

The researchers examined post-meal changes in plasma oxygen radical absorbance capacity and in concentrations of tocopherols, catechins (similar to flavonoids), oxidized LDL, and malondialdehyde, a marker for oxidative stress, in response to pecan test meals. Sixteen healthy men and women were randomly assigned to three sequences of test meals composed of whole pecans, blended pecans, or a control meal. No changes were noted with the latter.
